Ingredients:
- 1 1/2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup vegan chocolate chips
- 1/4 cup dried cranberries
- 1/4 cup chopped nuts such as almonds or walnuts
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup non-dairy milk such as almond or soy milk
- 1/4 cup unsweetened applesauce
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
Instructions:
Warm the oven up to 190C 375F
Clean and grease a muffin tin, or use paper liners to line it
Put rolled oats, flour, brown sugar, chocolate chips, dried cranberries, chopped nuts, baking powder, cinnamon, and salt in a large bowl
Add the non-dairy milk, applesauce, melted coconut oil, and vanilla extract to a different bowl and mix them together using a whisk
Add the wet ingredients to the dry ones and mix them together just until they are mixed
Do not mix too much
Fill up each muffin tin cup three quarters of the way to the top with batter
In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean
Take them out of the oven and let them cool for 5 minutes in the muffin tin before moving them to a wire rack to cool all the way through
